Key Responsibilities
- Manage daily food production including marination, sauces, and prep items.
- Ensure product quality, consistency, and adherence to standard recipes.
- Supervise meat handling, raw material storage, and cold chain management.
- Maintain inventory control using FIFO / FEFO and minimize wastage.
- Ensure hygiene, sanitation, and food safety standards (HACCP).
- Supervise kitchen staff and ensure efficient production operations.
- Coordinate packing and dispatch of products to branches.
- Prepare production, inventory, and wastage reports.
Requirements
- Proven experience in commissary / central kitchen operations.
- Strong knowledge of food safety, inventory control, and production planning.
