ROLE BRIEF: To supervise and control the complete gelatin-based jelly production line (Moughal style), ensuring efficient operations, achievement of daily production targets, adherence to quality standards, and compliance with food safety requirements. Responsible for manpower handling, process control, machine coordination, and documentation.
Location: BASED IN MULTAN
Qualification & Experience:
- Qualification: Diploma/B.Tech/BSc in Food Technology, Mechanical, Chemical/Industrial Engineering, or related fields.
- Experience: 3–7 years’ experience in jelly/candy/confectionery manufacturing.
- Working experience on gelatin-based jelly (Moughal type) preferred.
Key Responsibilities:
- A. Production Planning & Execution:
- Execute daily production plans issued by PPIC/Planning.
- Ensure readiness of RM/PM, manpower, and equipment before production start-up.
- Manage critical processes: mixing, dissolving, cooking, transferring, depositing, mould handling, demoulding, oiling/starch application, conditioning, curing, and packing.
- Achieve hourly and daily production targets with maximum efficiency and minimal stoppages.
- B. Process Control & Product Quality:
- Ensure strict adherence to recipes, batch parameters, SOPs, and quality standards.
- Monitor BRIX, pH, moisture, texture, clarity, color, flavor, temperature, and viscosity.
- Coordinate with QA/QC to maintain product specifications and food safety compliance.
- Take immediate corrective actions on deviations or non-conformance.
- C. Technical Operations & Coordination:
- Operate and oversee functioning of key equipment (cookers, depositors, conveyors, cooling tunnels).
- Work closely with Mechanical and E&I teams for preventive, corrective, and predictive maintenance.
- Support engineering teams in calibration, equipment modification, and line improvements.
- Ensure maximum mechanical uptime and machine performance.
- D. Raw Material & Inventory Management:
- Ensure proper consumption of gelatin, glucose, sugar, acids, flavors, colors, and ingredients.
- Track material issuance, usage, wastage, and yield.
- Maintain traceability of FFG/RM batch records.
- Coordinate with warehouse for timely RM/PM availability.
- E. Manpower Leadership & Training:
- Supervise operators, helpers, and support staff across all shifts.
- Ensure skill-based manpower assignment for each stage of production.
- Train team members on machine handling, hygiene, safety, and process controls.
- Enforce discipline, attendance, and compliance with company policies.
- F. Safety, Hygiene & Compliance:
- Ensure adherence to PHS, GMP, GHP, Food Safety, and Halal standards.
- Perform routine hygiene inspections and ensure sanitation of equipment and production areas.
- Report hazards/risks from safe machine operations.
- G. Continuous Improvement:
- Monitor line efficiency, identify bottlenecks, and initiate improvement actions.
- Participate in Lean Manufacturing, Kaizen, and waste reduction initiatives.
- Support trials for new products, recipes, and packaging formats.
- Suggest improvements in process and equipment for quality and productivity.
- H. Documentation & Reporting:
- Maintain detailed records including:
- Daily production logs
- Batch process sheets
- In-process quality checks
- Inventory analysis
- Material consumption
- Cleaning & sanitation checklists
- Submit daily/weekly reports to Production Manager.
